Mining Non-Conventional Yeasts Biodiversity is a scientific meeting organized within the framework of the NCYdiversity project (PRIN PNRR 2022 – NextGenerationEU), a collaborative initiative involving the Universities of Verona, Perugia and Basilicata, focused on the exploration and valorization of non-conventional yeasts as key bioresources for innovation in the fermented food and beverage sector.
The event brings together international experts in genomics, bioinformatics, microbial ecology and food biotechnology to discuss genome-resolved and metataxonomic approaches as bioprospecting tools for the discovery, characterization and exploitation of yeast biodiversity, with particular emphasis on non-Saccharomyces yeasts and emerging taxa such as the genus Mrakia.
Through contributions ranging from microbial biodiversity and genomic characterization to metabolic modeling, industrial applications and microbial culture collections as strategic infrastructures, the conference aims to foster knowledge integration and promote innovation in sustainable food systems and the bioeconomy.
